This is a very attractive dish when served. Baked Potato Salad 4 large baked potatoes, (bake, cool, peel and cube) 1/2 cup sour cream 1/2 cup mayo (I use veganaise) 4 ounces shredded cheddar cheese 3 green onions chopped, (chop tops and save for garnish) 1 celery stalk chopped 1/2 tsp. black pepper 1/2 tsp. seasoned salt dash dried mustard dash garlic powder dash paprika 1 tablespoon chopped parsley or cilantro 1 hard boiled egg, chopped (optional) Garnish top with `````````````````````````` Bac O' Bits (soy ) Sprinkle of cheddar cheese Green onion tops Place all salad ingredients into a bowl and gently mix.
