" Eggless Egg Salad " 1 lb. firm or extra firm tofu 1/3 cup mayo of your choice 2 tsps. prepared mustard 1/4 tsp. garlic powder pepper to taste 1/8 tsp. turmeric (gives it the nie yellow color) 1/2 tsp. soy sauce 1 slice of bell pepper minced 1 stalk celery chopped 2 or 3 green onions minced Don't freeze tofu for this one. Drain water off tofu and press between a few paper towels. Mash tofu with a fork in a bowl to a crumbly consistency. Add ingredients and mix well. Ready to eat now.
