Guest guest Posted January 5, 2006 Report Share Posted January 5, 2006 I find that if you freeze firm or extra firm tofu in the tub (not silken) it really takes on a chewy consistency. Now you can thaw it and pat water with paper towels. It will work better for a stir fry too. I like to season it and saute with herbs, garlic and onions and toss in my spaghetti. It's good for a tofuna salad and works as an eggless eggsalad also. The silken tofu is better for dressings, dips, smoothies, dessert recipes, that type recipe. My husband loves that and though the conventional sort was bad for him, he still yearns for it. Maybe I have the ingredients for it here...I don't have the kelp powder for the tunaless recipe, but maybe I do for eggless salad. And anyway, I can use the recipes for later!
