I wanted to try kale since everyone has been talking about eating greens. I liked this soup alot and it was easy. Potato and Kale Soup 4 teaspoons olive oil 1 onion, hopped 3 garlic cloves, minced 3 medium potatoes, peeled and sliced 4 cups water 1/2 lb of kale, trimmed and shredded 1/4 teaspoon black pepper In a large saucepan, heat olive oil for 1 minute, add onion abd cook for 5 minutes. Mix in the garlic, potatoes and water and cover, raise the heat and bring to a boil - about 4 minites. Turn heat to simmer and simmer for 20 minutes or until tender. Using a potato masher, carefully mash the potatoes right in the saucepan. Mix in the kale and pepper, cover, simmer for 15 minutes or until kale is just tender. Ladle into soup bowls. Today I am making sage stuffing with what is left of a loaf of Focaccia Bread. Whatever that is. LOL Found it on the day old shelf as the super market. I am not very fond of kale, but do enjoy spincah and right now need to take in more leafy green vegetables to take care of some imbalances which showed up on the last bloodwork I had from my doctor. I wanted to express, too, that I really have enjoyed this group. I am not vegetarian yet, but I eat very little meat and have thought about eliminating it all together from my diet. I am also lactose intolerant and so i am interested in any recipes for foods which traditionally use dairy products altered to use non dairy ingredients. I am hoping to for the new year of 2006 find a way of eating which works for me. I have IBS and colitis and unfortunately many " healthy " foods play havoc with my system...broccoli (which I love ), cauliflower, fresh citrus, many kinds of pasta, beans, and I have to be careful with my intake of cooked tomatoes.
