As it turned out, it was not truly African food; it was Jewish recipes from the Northern African region which included Egyptian, Moroccan, and even a Turkish dish. (not sure how that became part of this African feast LOL) The food was marvelous. He was a very good chef and made the absolute best Baklava I have ever had in my life! There were both meat dishes and vegetarian dishes. He served M'Raad (Egyptian Eggplant Salad) recipe to follow Moroccan Lamb and Pear Tagine Mina (Turkish Meat Pie) reminded me of pirogues ?? The same as the Mina but filled with mashed potatoes and onion ?? The same as the Mina but filled with a spinach mixture Tabouli Basmati rice with fresh basil Baklava I am not sure if the Tagine can be made meatless or how one would go about it. If anyone is interested in the other recipes just let me know and I will post it. At this point, I still need to get the Baklava recipe from him (if he will give it to me). I know he said he did something different with it, since I am diabetic. I would think the Mina would be easy to make with TVP. Now, I never knew a chef was a messy person. (although later I had friends that said it was so - because chefs have people who follow around them and clean up). But, truthfully, I have never seen so much food/particles/bits on the counters, on the stovetop, baked on the bottom of the oven, or on the floor. He just seemed to flail things everywhere. I even found splatters on the wall behind the stove. (sigh). I finally finished the dishes today and I still have the floor to go. sigh Not sure I would ever do this again--not without something in writing that says he will stay and help clean the mess he made! I don't know if Chef's are messy or not, there was always such a crew in the hotel kitchen. I worked in a hotel years ago, (Yes I was the collector there too) both Chef's had bad tempers if something went wrong but they were both so kind in showing me how to prepare things on my lunchbreak. I was always fascinated watching the ice carver, he would make the most gorgeous staues out of ice for parties in the banquet room. Your eggplant recipe looks good.
