Sorry, I finally have time to read emails. Why are the holidays so hectic?

(rhetorical question LOL)

 

Actually (even though it says cake in the title) they actually look like

brownies. I am not sure it would work in a loaf pan, unless you have a lot of

loaf pans to split the batter into. Do you have an 8 x 8 pan? That would work.

 

Another thought --- one time my friend left the batter in the fridge overnight

(she just plain ran out of time to cook the next batch) and it was awful!! LOL

So, once you make the batter, cook it. :)

 

Another thought --- sometimes she leaves the zucchini seeds in. It is

surprising to run into the seeds; but it was still very good. Now that I am

thinking of them, I need to go down to the deep freeze and pull out another bag

of them. I so love receiving food as a gift! She wraps each brownie square

in plastic wrap and freezes them. I just grab a square, unwrap it, and after a

few minutes I eat it. I have also warmed them gently in the microwave. It just

seems they are good no matter what.

 

I am not sure if anyone could convert it to a successful vegan recipe. I asked

my friend, and she didn't think it would convert well.
