Dan Indian Chutney 3 lbs semi-ripe mangoes (about 4) 2 1/2 lbs white sugar 4 oz fresh ginger, sliced 3 oz garlic cloves, chopped 1 level teaspoon of chili powder 12 cloves 2 or 3 sticks cinnamon, broken in half 2 oz raisins (optional) 2 oz slivered almonds (optional) 1 1/2 pints cider vinegar salt to taste near end of cooking Skin mangoes and slice flesh into one to two-inch thin slices, or small diced cubes. Then cook together with sugar until sugar is all dissolved. Add all other ingredients and let boil gently for half an hour or a little longer.
