Working those long hours to buy Christmas almost killed me, but I made it. Miss posting to the group, but hope I can catch up. I made this bread last night and my son and I almost ate a whole loaf by ourselves!! It is terrific!! Thanks for sharing. Julie Butternut Squash Bread 2 cups mashed cooked butternut squash (I cut in large chunks and steam) 1 cup canola oil 2 cups sugar 3 eggs beaten 1 tsp. vanilla 3 cups flour 1/4 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon * optional 1 cup chopped pecans or walnuts Preheat oven to 350 degrees, and grease two 8 1/2X4 loaf pans. In large mixing bowl combine, squash, eggs, sugar, vanilla and oil, and blend. In a separate bowl mix all the dry ingredients (except walnuts) and add to the wet ingredients. Stir until just combined. Fold in nuts. Pour into prepared pans and bake until toothpick inserted comes out clean. 60 minutes. Cool 10 minutes on wire rack. Remove from pans and continue cooling on wire rack. " I guarantee you, this place will blow your mind.
