As for my corn muffins, all I did was use an egg substitute and soy milk in a regular ol' recipe. I did get a new vegetarian cookbook today & I hope the recipes are as good as they look. Generally in the south, if it's sweet, it's not cornbread :-P If it wasn't for the sweetness of soy milk I'd use it in cooking as well as drinking - for me it only seems good for drinking...
