Guest guest Posted January 2, 2006 Report Share Posted January 2, 2006 Kasha with Onions and Potatoes 1 cup kasha, uncooked 1/2 tsp salt 1/4 tsp. pepper 1 tsp. vegetable oil 1 1/2 cups chopped onions 1 medium potato, boiled or microwaved and cut into small cubes 3 cups boiling water Preheat oven to 350, lightly oil 2 quart casserole dish. In a large skillet heat over medium heat and toast the kasha, stir frequently until kasha is fragrant, about 5 mins. Remove from heat and place kasha in prepared casserole dish. Return skillet to heat and add oil. Add onion and cook, stirring often for about 3 minutes, add potato cubes and continue cooking for 8 minutes. Make sure onion and potatoes are browned. Stir boiled water into kasha then add the onions and potatoes. Salt and pepper, and stir, cover and bake 20 minutes. Fluff with fork and serve.
