greens and black eyed peas attn Kenia and new cookbook

I got a wonderful new cookbook from my sister-in-law called the

Passionate Vegetarian by Cresecnt Dragonwagon

 

This is my interpretation of one of her recipes! (the original has

mushrooms in it which sounds good too)

1 T oil

3 cloves pressed garlic

2 1/2 cups tomato sauce

2 cup cooked black-eyed peas

1 bunch kale or collards, slice very thin

1. Saute garlic

2. Add b.e.peas and tomato sacuce, stir over low heat for 20 min.

3. Boil large pot of water, blanch greens until limp

4. Add about a quarter of greens to tomato mixture

5. Serve over polenta or brown rice garnish with remaining greens.
