Guest guest Posted December 31, 2005 Report Share Posted December 31, 2005 This is an easy soup to make. Doesn't contain all the fat from butter, sour cream or milk of the usual version. Baked Potato Soup 2 med. large baking potatoes (baked) scant 1/4 cup flour salt and pepper to taste 2 to 2 1/3 cups vegetable broth 3 to 4 oz. grated cheese, colby, cheddar (vegan cheese if desired) chopped green onion tops or chives for garnish dash of liquid smoke to replace the bacon but this is optional Slightly cool baked potatoes, scoop out the insides and set aside. In a saucepan heat 1/2 cup of the broth and slowly add the flour as your whisk while heating. As the mixture thickens add potatoes, salt and pepper. Turn the heat to medium high, and as you stir, mash the potatoes. When mixture starts to bubble, add balance of broth and cheese. Stir until cheese is melted. Add dash of liquid smoke if desired. Ladle into bowls and garnish with green onion tops or chives. " I guarantee you; this place will blow your mind.
