I am slso close to the ocean in CA and I would not attempt to do fruit and veggies air dried. If you want to know more, join the dehydrator group. You can go " no mail " and just glean what info that you want. Regarding canning. I used to do a lot of canning when my kids were small. We had a lot of fruit trees and made all of my jam and canned fruits, made pickles etc. I can't eat sugar and my husband does not eat much jam etc so no longer do this. My kids are alive so guess I did not poisen anyone. I used to make apricot jam and give it to my friends at Christmas in the french jars. Thee are not put in a water bath but have a layer of wax on top to keep them safe. My friends were returning my jars - hoping that I would re- full them!!! I put a little apricot brandy in them,so no wonder they were happy!!! One year I made what was supposed to be apricot wine and turned out to be an apricot brandy. Never could recreat this one! LOL We have a very old house with no foundation and it called for putting the jugs under the house for x number of days, weeks? One thing that I was wondering, I see you and others using the microwave. One thing that I have learned with my research on my cancer is that microwaving destroys nutrients in vegetables, so it kind of " blows me away " that such a health conciencious group would use a microwave. Mine does not get any use anymore. When I had my kitchen remodeled I had the microwave built in. When it dies I will not replace it. Anyone wanting more info on this can find it on the web or a group called " cancer cured " . A lot of good info for those that do not have cancer but just want to cure other things such as diabetis (spelled wrong) etc, or just more aware of what is healthy. I actually thank God for my cancer in that I have learned so much about food and healthy eating that I can pass on to my children and to my granddaughter to hopefully lead them to a disease free life.
