Donna's coffee chocolate chip cookie recipe post reminded

me of this favorite recipe, and i had to share. Not exactly

healthfood, but sure is yummy for a treat. Now Iris Murdoch

is quoted as having said, " One of the secrets of a happy life

is continuous small treats. " Now i think she is onto something

there, don't you? ;)

Mocha Brownies

1 package (12.5 oz) brownie mix

1/2 cup water

1/4 cup vegetable oil

1 egg

2 tsp instant coffee granules

1 tsp vanilla extract

Filling:

1/4 cup butter or margarine, softened

1/2 cup packed brown sugar

1 egg

2 tsp instant coffee granules

1 tsp vanilla extract

1 cup chopped walnuts

3/4 cup semisweet chocolate chips

Icing:

1/2 cup semisweet chocolate chips

1 Tbs butter or margarine

1/4 tsp instant coffee granules

1 to 2 tsp milk

In a bowl, combine the first six ingredients and mix well by

hand. Spread into a greased 13x9x2 inch baking pan.

Bake at 350 degrees for 30 to 35 minutes or until brownie test

done with a wooden pick. Meanwhile, in a small mixing bowl,

cream butter and sugar until light and fluffy. Add egg, coffee and

vanilla; mix well. Stir in walnuts and chocolate chips. Spread over

brownies. Bake at 350 for 17 minutes. For icing, melt chocolate

chips and butter in a saucepan over medium heat, stirring

constantly. Whisk in coffee and enough milk to reach drizzling

consistency. Drizzle over warm brownies. Cool before cutting.

Yield: 3 dozen

O Winter! ruler of the inverted year, . . . I crown thee

king of intimate delights, Fireside enjoyments, home-

born happiness, And all the comforts that the lowly roof

Of undisturb'd Retirement, and the hours Of long un-

interrupted evening, know.

~ William Cowper (1731 - 1800), Task (bk. IV, l. 120)
