Daughter and I canned salsa,peppers and tomato sauces this year. Years past we canned several types of pickles. We often give bottles of home canned foods in baskets as Christmas gifts. Daughter's peppers are so pretty and tasty this season that she saved the best for entering in the State Fair. We had so much fun traveling out to the farms (we live in the city darn it !!) shopping for local produce and then canning together. Start out with easy things to *can* and you will be so proud of the bottles on your shelves. We canned tomatoes this season because we heard that many crops were damaged durring the huricanes and will be expensive this winter. I do remember my Gran made jam but I never watched her. I was busy eating it. I'd be terrified of botulism. It seems like something that's really hard to do. Guest guest Posted December 30, 2005 Report Share Posted December 30, 2005 Actually, Donna, the sterilization part is easy, it's the canning process that you have to be careful with. The USDA has now come out and said the safest way to can is to use a pressure canner for everything. You can sterilize your jars either in a boiling water bath or in the dishwasher. The best thing to do, if you want to can, is to find someone who does it and get together with them for a day of canning. It's a fun way to spend the day.
