Four Bean Salad recipe per request by Kenia

Let's add another bean. I make this one frequently.

Four Bean Salad

 

(all 16 ounce cans)

1 can kidney beans, drained

1 can cut green beans, drained

1 can wax beans, drained

1 can chickpeas, drained

1 med. onion cut in very thin slices

1 garlic clove, minced

1/2 cup red wine vinegar

1/8 cup balsamic vinegar or rice vinegar

1/2 cup extra virgin olive oil

1/2 cup sugar

1 teaspoon salt

1/2 teaspoon pepper

 

In a large bowl mix the olive oil, vinegars, sugar, pepper and garlic.

Add balance of ingredients and mix well.

Cover and let marinate in the refrigerator for 5 to 6 hrs or more.
