Air Drying

I have never had a problem (mold) with air drying fruit, veggies or

herbs. But, I live in the dry climate of Colorado. That could be the

reason. I buy organic fresh herbs, use some that day, dry the rest and

store them in canning jars. If you are concerned about dust or insects

cover with a piece of paper towel. By the way I store all my left over

food in recycled glass jars and refrigerate. Safer than plastic.
