Guest guest Posted December 30, 2005 Report Share Posted December 30, 2005 I have never had a problem (mold) with air drying fruit, veggies or herbs. But, I live in the dry climate of Colorado. That could be the reason. I buy organic fresh herbs, use some that day, dry the rest and store them in canning jars. If you are concerned about dust or insects cover with a piece of paper towel.
