Sandy Black-Eyed Pea Slaw Dressing: 2 tablespoons white wine vinegar 2 tablespoons Dijon mustard 2 teaspoons horseradish salt and pepper sprinkle of crushed red pepper sprinkle of your favorite dried herbs, even could be Mrs. Dash 6 tablespoons vegetable oil Salad: 2 (15 oz.) cans black-eyed peas, rinsed and drained 1 small head of cabbage coarsely grated 2 cucumbers, peeled, seeded and diced 2 medium carrots, peeled and grated 1/3 of an onion, chopped 2 garlic cloves, squeezed 2 tablespoons minced chives or parsley Whisk together vinegar, horseradish, salt and pepper, herbs and red pepper flakes. Add oil a little at a time as you whisk. Add remaining salad ingredients and toss to coat. DSL Something to write home about.
