I don't know anything about the fruit. It won't spoil? It doesn't get stuck to the paper towels. I sometimes dry fruit on stainless steel racks or often just on a clean white paper towel. Works great and no electricity needed. Even low heat destroys nutrients in the foods so air drying is healthier in several ways. Most things dry in a day or two and the aroma in the house is another benefit.
