Guest guest Posted December 29, 2005 Report Share Posted December 29, 2005 Shortbread Pumpkin Pie 1/2 cup sugar 1 cup butter 3 cups flour Cream butter and sugar. Add flour and mix well. Press down firmly into a 10x16 pan. Filling: 4 eggs, slightly beaten 3-1/2 cups pumpkin (29 oz. can) 1-1/2 cups sugar 1 tsp. salt 6 tsp. Pumpkin Pie Spice 3-1/2 cups evaporated milk Pour filling onto unbaked shortbread and bake in 425 degree oven for 15 minutes. Reduce temperature to 350 degrees and bake for 55 minutes.
