During Passover, we added chopped boiled egg (tofu now that I'm a vegan) and crumbled matzoh (farfel). I make a tofu sour cream. " Ruby Consomme 1 lb beets, peeled & cubed 1 small onion, chopped 4 cups water 1 tbl lime juice 1/4 tsp sugar < I used stevia> - salt & pepper to taste - 1/2 cup sour cream <optional> In a large saucepan; combine beets, onion and water. Bring to a boil. Simmer 15 minutes or until beets are tender. Transfer beets and onion to a blender. Process until smooth, adding a small amount of beet broth. Return pureed vegetables to broth. Add lime juice, sugar, salt and pepper to taste. Bring to a boil. Serve with a dollop of sour cream.
