Guest guest Posted December 29, 2005 Report Share Posted December 29, 2005 I just wanted to pop in and share my success story with pancakes. :>) I made them last night, to my old family recipe, with half a banana (for a doubled recipe), six T. water, and about 3 T. flaxseed thrown in for good measure. I mashed the naner with the water and mixed it in with the " buttermilk " --which consisted of 2 c. soymilk and about 3 T. white vinegar. I waited about five minutes to make sure it had curdled before I added it, stirring it every now and then to " help it along " . Then I blended the naner mixture real well with the " buttermilk " mixture, and added the dry ingredients (unbleached flour, baking soda, organic sugar to taste). I found about 1/2 stick of soy margarine in the fridge, so I melted 2 T. of it to go last into the batter, and mixed it real well also. My dh agrees with me that these pancakes were the highest risers thus far, (even sans cow's milk!) and they were so tender and light too! I think the thickness/fluffy ratio was about an inch. At LEAST an inch high. :>) And sooo good. You could taste the banana, which might be a detriment to some, but for us it was okay. After all, banana goes with so many things: maple syrup, raspberry (jam), apple (butter), currants (preserves)--as a complementary flavor. I even, briefly, considered chocolate syrup on my stack last night <g>. But in the end, I went with apple butter. Dh had raspberry jam on his, and no soy margarine; he said the pancakes were just as tasty without as with, and since I love to have 'butter' on my pancakes, he gave me the full share. My doubled recipe made seven huge, IHOP-sized pancakes--which is the size dh prefers. Otherwise it makes 12 or 14, or thereabouts.
