Guest guest Posted December 28, 2005 Report Share Posted December 28, 2005 Strawberry Spinach Salad Salad Items 2 bunches fresh spinach (baby spinach is best) 1/2 small red onion, sliced very thinly 1 pint strawberries, sliced 1 can mandarin orange slices, drained Salad Dressing 1/8 Cup chopped red onion 1/2 cup sugar (or 1/2 cup Splenda) (not sure what other substitutes there might work) 2 Tablespoons sesame seeds 1 Tablespoon poppy seeds 2 Tablespoons chopped red onion 1/4 Teaspoon Worcestershire sauce 1/4 Teaspoon paprika 1/2 Cup vegetable oil (I use canola oil) 1/4 Cup apple cider vinegar Arrange spinach, onion, strawberries, and orange slices in a large bowl. Place rest of ingredients in blender, and blend until thickened. Drizzle desired amount over salad, and serve immediately. Recipe can be doubled or tripled easily for larger crowds. Anytime we go to a potluck, we are asked to bring this......have yet to find anyone that doesn't love this salad. Salad dressing keeps well in fridge. This dressing is the best! And is good on any type of lettuce salad. I have used just the spinach, or mixed spring greens and with an assortment of different toppings instead of the fruit.
