this is one of my favorite tamale fillings...the green

olives seemed weird to me at first, but believe

me...they are wonderful.

black bean and green olive tamale filling

1 T. chili powder

2 tsp. ground cumin

1 15 ounce can black beans, drained, rinsed and

coarsely chopped (1 1/2 cups)

1/3 cup pitted green olives, coarsely chopped

salt and pepper to taste

in a small dry skillet, toast chili powder and cumin

over low heat, stirring constantly until fragrant,

about 1 minute. transfer to a mixing bowl. add black

beans and olives; mix thoroughly. season with salt

and pepper.

fills about 16 tamales.
