recipe already if i remember correctly. i am going to make

veggie lasagna for our New Year's Day dinner.

Well, if you have some puree of pumpkin or some apple

sauce you can use that in place of melted butter or oil;

mashed bananas work, too. You will change the flavor

of the pancakes, but they will be delicious. How about

peanut butter or some other nut butter? Do you have some

of that? Just as my own personal preference, i do not like

to use olive oil in my sweeter cooked items, but that could

be due to having tried only with extra virgin olive oil, and

that has a more strong flavor; a lighter olive oil might work

out okay. *shrugs*

~ You are very welcome, Erin. Glad it was helpful. i have

found that those little jars of mashed baby food fruits are

very useful; they don't taste as strong as say a mashed fresh

banana does, and they are already done for you! :)
