Well, if you have some puree of pumpkin or some apple sauce you can use that in place of melted butter or oil; mashed bananas work, too. You will change the flavor of the pancakes, but they will be delicious. How about peanut butter or some other nut butter? Do you have some of that? Just as my own personal preference, i do not like to use olive oil in my sweeter cooked items, but that could be due to having tried only with extra virgin olive oil, and that has a more strong flavor; a lighter olive oil might work out okay. *shrugs* In digest#345 Erin wrote: " Thanks, PT, for the replacement list.
