Guest guest Posted December 22, 2005 Report Share Posted December 22, 2005 Glad to be back in LA. Today I'm baking cookies and Gran sitting, but she thinks it's only a visit. I made this for our lunch today, she loved it. Recipe is compliments of my friend Terra. Makes 2 servings. Quesadilla Pizza 4 soft taco sized flour tortillas (no lard) 1 cup shredded Cheddar cheese olive oil 3/4 cup pizza or pasta sauce 1/2 teaspoon cumin 4 to 6 tablespoons of refried beans 1 tablespoon canned mild chiles 2 green onions chopped 2 tablespoons ripe olives 1/2 cup shredded Jack cheese Preheat oven to 450 F. Sprinkle two tortillas with Cheddar cheese. Lay side by side on a cookie sheet. Place cheddar cheese on top and then top each with tortilla and brush top with olive oil. Bake in oven for 4 minutes. In a small bowl, combine pizza sauce and cumin and spread sauce over top of both tortillas. Spoon on refried beans and sprinkle chiles, onions, olives and Jack cheese over top. Bake for 3 to 5 more minutes, or until cheese is melted. Cut each quesadilla into four wedges and serve. Whoops, I forgot hubby will be off work, so make that, " a good quick lunch for US " tomorrow. :>) I've got beans 'n' greens soup cookin' in the crockpot today for supper this evenin', and will make some cornbread later to go with it. I keep snitchin' tastes of the turnips and greens..hopefully there will be enough left in the soup, ha ha. Back to the cards station, along with Bluebonnet's inestimable help...yeah right <g>.
