SPINACH DIP (vegan version) 3 green onions chopped 2 cloves of garlic squeezed 1 (10 oz) package frozen chopped spinach, drained and thawed and squeezed 1/2 cup Veganaise mayo 1/2 teaspoon cayenne pepper 1/3 lb. silken tofu 2 tablspoons lemon juice few drops of sesame oil 1 tablespoon soy sauce 1/3 cup waterchestnuts slivered A sprinkle of non-salt seasoning Place tofu in bowl with all ingredients except spinach and firmly blend with a fork making sure to mash tofu.
