Chili Corn Muffins 2 1/2 cups flour 1 cup cornmeal 1/4 cup sugar 5 tsp baking pwdr 1 1/2 tsp salt 1 tsp chili pwdr 2 eggs 1 1/2 cups milk 2/3 cup vegetable oil 1/2 cup finely chopped onion 1 can (4oz) chopped green chilies, drained In a large bowl combine flour, cornmeal, sugar, baking powder, salt ad chili powder. In a small bowl, beat eggs; add milk, oil, onion and chilies. Stir into dry ingredients just until moistened. Fill greased muffin cups two thirds full. Bake at 400 degrees for 20-25 minutes or until muffins test done.
