Guest guest Posted December 21, 2005 Report Share Posted December 21, 2005 This recipe is so rich and delicious. It also has the pretty colors of the season; the green chilies add a nice bit of zip. Digest#335 and counting.... Baked Macaroni 'n' Cheese 1 package elbow macaroni [16 oz.] 2 pounds process American cheese, cubed 8 ounces Swiss cheese, cubed 1 medium green pepper, chopped 1 medium onion, finely minced 1 can diced green chilies, drained [4 oz.] 1 jar diced pimientos, drained [2 oz.] 4 eggs 4 cups milk 1/2 tsp. pepper Salt, to taste 1/4 tsp. paprika Cook macaroni, drain and rinse. Add cheeses, green pepper, onion, chilies, and pimientos. Combine eggs, milk, and pepper; add salt if you want. Pour over macaroni mixture and mix well. Pour into two greased 13 x 9 x 2 inch baking pans. Sprinkle with paprika. Bake uncovered at 350û for 35 minutes or until bubbly and browned. Yield: 18 (3/4 cup) servings ~ but i have yet to find anyone who can stop at 3/4 cup! *lol* ~ pt ~ When you come to the edge of all the light you know, and are about to step off into the darkness of the unknown, faith is knowing one of two things will happen.
