Moosewood cookbooks question

I just bought their " Simple Suppers " or is it 'Simply Suppers " Book is in the

trunk of my car right now. Anyone else have this book and if so what's good in

it?

I have this cookbook. Only made Pineapple Rice with Tofu on page 88 or 89.

Can't remember off hand which page but it sure was good. No time to make

anything else out of it yet.

Now I will say some of those recipes don't look that simple, you know like

the toss it all in the pan for 20 minues and it's done types.

sorry to be late on this one but it's been a state of controlled

chaos here : ). I have tried so far the Green and White Bean Gratin

on p.57 and Blender Tomato Hot Sauce on p. 244. the gratin topping

is really rich and I barely used half of the Parmesan called

for : ). non-veggie hubby liked it too : ). it could probably be

made vegan pretty easily. we made a half recipe and baked it in a

greased loaf pan.

the hot sauce is fantastic over baked potato wedges, black beans

with little cheese, and anything Mexican. my favorite with the hot

sauce is some oven-crispy potato wedges, little cheddar, a ladle of

sauce, and topped with dollop of sour cream, black olives, and diced

onions.

 

Green and White Bean Gratin

 

2 c. frozen green beans

2 15 oz cans white beans (I used navy)

4 cloves garlic, minced

2 tsp dried rosemary, sage, or thyme (I used half thyme and half

rosemary)

1/4 tsp salt

pinch black pepper

1 c. grated cheddar, fontina, or gruyere cheese (or vegan cheddar)

1 c. bread crumbs (I used dried seasoned)

1 c. grated Parmesan (or vegan equivalent)

2 tbsp butter (or earth balance)

 

preheat oven to 375 degrees. butter an 8 " square pan. defrost green

benas by placing in very hot water a few minutes. drain and spread

to cover bottom of baking dish.

in a blender, whirl one can of beans, undrained, with the garlic,

herbs, salt, and pepper till smooth. pour over green beans in baking

dish and sprinkle with cheddar cheese. drain 2nd can of beans and

spread over cheddar.

in small bowl combine breadcrumbs, Parmesan, and melted butter.

sprinkle over top of gratin. bake covered 25 minutes. uncover and

bake till golden and bubbling, ~10 minutes more.

 

serves 4-6.

 

it suggests serving this with baked or sauteed apples.
