Here's my recipe: Chocolate Coffee Cookies 3/4 cup firm packed brown sugar 1/2 cup sugar 1/2 cup butter or margarine (softened) 1/2 cup vegetable shortening 1 tsp. maple extract 1 large egg slightly beaten 1 3/4 cups flour 2 tsps. instant coffee granules 1 tsp. baking soda 1 cup semi sweet chocolate chips 1/2 cut walnut pieces (optional) Preheat oven 350 and lightly grease cookie sheet Cream sugars with butter and shortening until smooth, about 2 minutes. Beat in egg and maple extract. In a separate bowl mix dry ingredients. Add to the creamed mixture and beat until combined. Stir in chocolate chips and nuts. Drop by tablespoonsful onto prepared cookie sheet. Bake 8 to 10 minutes, don't overbake. Cool on wire rack. Makes about 30 cookies. Quote Link to comment Share on other sites More sharing options...
