It has little air holes all over like you see when pancakes are cooking through, but they stay in the bread. The taste is mild, not real wheaty tasting. In the Ethiopian restaurants, you do not use utensils. You break off pieces of the bread and pick up food with it. Most of the dishes are made with lentils, but there are some with vegetables, and some salad. The restaurants I have tried add meat and chicken on the menu, but I think the basic diet is vegetarian. We have tried roti, Trinidadian food, that seems to use a very similar kind of bread. It is like a huge burrito (3 - 4 times larger than a burrito) wrapped around your chosen fillings. Most of the filling choices are NOT vegetarian, eg.
