What name have you given your bread so we can file it? Ray's sweet bread?

Have you even used pure maple syrup as a sub. for honey?

You thought it would be a tart and it turned into a bread? LOL Donna

INGREDIENTS

2/3 cup honey (Best from bee's feed on wild tyne but any will do)

½ teaspoon cinnamon

¼ teaspoon each: Ground cloves, ground nutmeg

½ teaspoon baking soda

2 eggs, separated (Not divorced) or subsitute for vegans

¾ cup vanilla non-fat yoghurt subsitute for vegans

½ cup raisins

¼ cup chopped pitted dates

¼ cup chopped dried apricots

¼ cup finely chopped walnuts

1 ¾ cup whole wheat pastry flour

1 ½ teaspoons baking powder

½ teaspoon salt

Preheat the oven to 325 degrees.

In a small saucepan, heat the honey, bringing it just to the boiling point.

Remove from heat and stir in the spices and baking soda. throw it all into a

mixing bowl, fold the egg yolks and yoghurt or Vegan substitute and beat

together until smooth (or they give up their secrets). Add the honey mixture

and

mix in thoroughly, then rain in the dried fruit and nuts.

In a large mixing bowl, combine the flour, baking powder, and salt. Make a

hole in the centre and drizzle in the homey-nut mixture. Stir with vigour

until thoroughly combined. Beat the egg whites until stiff, (the egg's not your

arm) then fold into the batter. Pour into an oiled 9-by 5-by 3-inch bread

mould

Bake for 55 minutes, or until a knife inserted into the centre does not

stick. Cool on a cole place, then cover tightly with foil to store.

when cool eat and enjoy.

my egg substitute include any of these. 1 tbs gram (chick pea) or soya flour

and 1 tbs water 1 tbs arrowroot, 1 tbs soya flour and 2 tbs water 2 tbs

flour, 1/2 tbs shortening, 1/2 tsp baking powder and 2 tsp water 50g tofu

blended

with the liquid portion of the recipe 1/2 large banana, mashed 50ml white

sauce
