Guest guest Posted December 18, 2005 Report Share Posted December 18, 2005 Plantain and Pineapple Saute Dessert 2 Plantains, peeled and cut into 1/2 inch rounds (make sure the plaintain is very speckled) 2 tblspns. Butter 2 cups Fresh or canned pineapple chunks, drained Dash of cardamom 1/2 tsp. Ground cinnamon 1/4 tsp. Ground allspice 1/4 cup Pineapple juice or water 3 tblspns. Honey or maple syrup Place plantain chunks in saucepan of water to cover. Bring to boiling. Reduce heat. Simmer 5 minutes. Drain. In a skillet, melt the butter or margarine. Add plantain pieces. Saute 2 minutes. Add pineapple chunks, spices and pineapple juice or water. cover and simmer 5 minutes more. Add honey or maple syrup, to taste. Serve as a dessert.
