Donna, if I send this plantain soup recipe, please send me back some more ideas about what to do with them. They are very abundant in south Florida. Cream of Plantain Soup From " Vegetarian Magic " by John Nowakowski Serves 6 - 8 3 very ripe plantains, peeled and cut into 1-inch slices 1 tsp olive oil 1 Vidalia or yellow onion, chopped 1 Tbs minced garlic 1 quart vegetable broth 1 cup vanilla soymilk 2 Tbs yellow miso dash cayenne pepper 1 Tbs chopped cilantro Saute onions and garlic in olive oil until just light brown. Add broth and plantains. Cover and simmer until plantains are tender. Add soymilk, miso and cayenne. Simmer until hot. Puree mixture until creamy. Adjust seasonings.
