I know some of the wild mushrooms I've seen at the market looked they've been sitting there for weeks. I try to make sure they look fresh when I purchase and I always use them by the next day. I've only eaten the white mushrooms raw but now it makes me wonder how many people buy shitake and use eat them raw..
