If anyone has any recipes to share, I'll be > happy to get them. Hi, Catherine... I don't know much about celiac, but have some friends who are allergic to wheat. I've seen that occasionally *some people* who are intolerant of wheat can handle spelt, which is an ancient grain, a precursor to modern wheat. But that ability to tolerate it seems to vary widely. In any case, what type of recipes are you looking for? I have a barley bread (made with a hand mixer, of all things) that my wheat-allergic friend was thrilled to have (she loved it too, but she may not have been celiac, & I don't know if there is a difference?). There are also other grains out there besides corn & rice, that are either no gluten or low gluten, and you might be able to experiment to see which he can tolerate. Try for example, the many different rices (do you just have one kind?), quinoa, hominy (corn), buckwheat (which is a not even really related to wheat), kasha (roasted or not, buckwheat groats), millet, wild rice (which is actually a grass, not a grain, and not really rice), amaranth (a very tiny, assertively-flavored grain), teff (which is what Ethiopian injera bread is made fro, if you've had that)... There are also pastas made with rice, with lentils, with quinoa, available at health food stores or online if you haven't one near you and miss pasta.
