Hope you like it as much as all of us do. Mya Mushroom, Black Bean and Green Chili Melt 2 T. olive oil 1/2 lb. fresh white or brown mushrooms, sliced 2 cloves garlic, minced 1 loaf of Italian bread cut in half lengthwise 1 can black beans, rinsed, drained and lightly crushed 1 (4oz) can diced mild green chilis, drained 1/4 cup chunky salsa, mild or medium strength 2 cups Jack cheese, shredded (soy cheese works also) Preheat over to 350 In a large skillet heat oil over medium heat and add the mushrooms and garlic, saute until liquid has evaporated about 10 mins. Take cut bread halves and scoop out the center leaving about 1/3-inch thick shell. In a small bowl combine black beans, green chilis and salsa. Sprinkle 1/2 cheese over bottom of bread. Spoon 1/2 the mushrooms over cheese. Spread all bean mixture over mushrooms. Top with balance of mushrooms and cover with balance of cheese. Gently press top half of bread over filling. Wrap whole loaf in aluminum foil and seal tightly. Bake until heated through and cheese has melted, 15 minutes. Remove and cut into thick sandwich slices and serve.
