Ancient Chinese Wild Mushroomherd

 

1 tablespoon oil (olive, canola or sesame)

1 small onion, chopped

2 garlic cloves, chopped

1 slice of fresh ginger, grated

1 small jalapeno pepper, seeded and minced

1 to 1 1/2 cups of snow peas, ends & strings removed

1 small red bell pepper, seeded and coarsely chopped

1/2 small can sliced waterchestnuts

1 lb.assorted mushrooms(shitake, portobello, morels, shitake, cremini or our

choice) remove stems and chop all into bite size pieces.

2 tablespoons soy sauce

2 tablesppons mirin, rice white or cooking sherry

 

In a large wok or skillet, heat the oil and add all ingredients except soy

sauce or mirin. Stir fry for 5 minutes on high heat.

Vegetables should be crunchy tender.

Stir in the soy sauce and mirin.

Serve over steamed rice.
