Guest guest Posted December 15, 2005 Report Share Posted December 15, 2005 I have a huge stack of my recipes here to post with me and this is one I used to make all the time for Mo's classroom, I would take it from the oven and it stayed warm for quite a while. Just don't use Jiffy since it contains lard. It takes 2 of the 8.5 oz boxes or 17 oz cornbread mix. Basically your own cornbread recipe will work, you just need to assemble it with the sauteed ingredients and cheese. This is the biggest kid pleaser I know of and they never detect it's veggie dogs and it works with soy cheese too. This also makes a nice appetizer. CornDog Casserole 2 tablespoons butter or margarine 1 1/2 to 2 cups thinly sliced celery 1 1/2 cups chopped onion 1 lb. package veggie dogs 2 eggs, beaten 1 1/2 cups milk 2 tsps. dried sage or parsley or chives 1/4 tsp. pepper 2 (8 1/2 oz) dry corn bread mix 2 cups shredded cheddar or soy cheese, divided Preheat oven to 400 degrees and grease a 3 quart baking dish. In a large skillet over medium heat, melt butter or margarine and saute celery and onions for 3 minutes, now cut veggie dogs into thick rounds and saute with the onions and celery for an additional 3 minutes. Place one cup of this mixture in a small bowl and set aside. In a medium bowl, combine eggs, milk, sage, pepper and cornbread mix. Stir well to combine, then stir the hot dog mixture (except for the reserved one cup of mixture) into the cornbread mixture. Mix 1 1/2 cups of cheese into mixture. Spread into the prepared baking dish. Top with reserved one cup of veggie dog saute mixture and sprinkle the remaining 1/2 cup of cheese over top. Bake uncovered for 30 minutes, until golden brown.
