Guest guest Posted December 14, 2005 Report Share Posted December 14, 2005 Orange Sandwich Cookies 3 tablespoons butter 1 1/2 cups confections' sugar 2 tablespoons orange marmalade 1/2 teaspoon vanilla extract 48 thin gingersnap cookies Beat butter in a small bowl with an electric.mixer set at high speed until fluffy, about 1 minute. Add confections' sugar; beat until mixture is crumbly. Add orange marmalade and vanilla to bowl; beat until smooth. (You can prepare the orange cream filling up to 8 hours ahead. Refrigerature; bring bowl to room temperature before spreading on cookies.) Spread 1 heaping teaspoon of orange filling over 1 gingersnap. The gingersnap and the orange just sound so good to me. I told her that Samantha can nibble on them, but I will be doing more nibbling.
