It says it is supposed to serve 8 people, but i have never found that to be the case! We must eat too much of it here... if you are like me you may want to double this recipe. Company Potato Casserole 5 cups cooked cubed peeled potatoes 1 1/2 cups sour cream 1 1/4 cups shredded Swiss cheese, divided 1/2 cup shredded carrot 1/4 cup chopped onion 2 Tbs minced fresh parsley 1/2 tsp salt 1/2 dill weed 1/4 tsp pepper 1/4 tsp paprika In a bowl, combine the potatoes, sour cream, one cup of the cheese, carrot, onion, parsley, salt, dill and pepper. Transfer to a greased 8 inch square baking dish. Sprinkle with the remaining cheese and paprika. Bake, uncovered, at 350 degrees for 25 to 35 minutes or until bubbly.
