Guest guest
This recipe is from GH Nov 2005 issue. I made them for potluck and everyone at work ate them up before lunch. Here's the recipe: Amaretto Chunk Cookies 2 1/2 cups all purpose flour 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 cup butter or margarine (softened) 1 cup packed brown sugar 1/2 cup granulated sugar 2 large eggs 1 tablespoon Amaretto liquer 2 tsps. almond extract 2 cups semisweet chocolate chips 1 cup sweetened flaked coconut 1 cup slivered almonds In medium bowl combine first 4 ingredients and set aside. Preheat oven to 375 degrees. In a large mixing bowl beat butter and both sugars at medium speed until creamy. Beat in eggs, amaretto and extract. Reduce speed to low, beat in flour mixture just until blended. Stir in chocolate chips, coconut and almonds. Drop dough by heaping tablespoons 2 inches apart, on ungreased cookie sheet. Bake 10 to 12 minutes until golden around the edges. Transfer to wire rack to cool. Variation: I made 1/2 batch with dried cranberries and walnuts and the other half of the batch with chips, coconut and almonds. Both were wonderful.
