Mash as usual. It gives a lovely flavor to the 'taters. You can also do this just with the celery root and have mashed celery root, but that might be too strong of a flavor. It would depend on if you like the flavor of celery. Endive, radicchio and escarole can all, of course, be added to a leaf lettuce or spinach salad.
