It really looks like a lot of steps, it's not and well worth making. Now that I dug the book out and will post. I better make this again real soon. Creamy Tomato Soup 2 28 oz. cans of whole tomatoes 1 tblspn. light brown or dark brown sugar 3 tbslpns. butter or margarine 2 medium leeks, white & light green parts halved lengthwise, washed, and sliced crosswise into thin strips 1 tblspn. double-strength tomato paste (comes in a tube like toothpaste and imported from Italy), more intense flavor but the American canned version will work. Salt 1/8 tsp. nutmeg 2 tblspns. all purpose flour 2 cups vegetable broth Cayenne pepper Heat oven to 475 degrees and line a cookie sheet with foil. Drain the tomatoes in a strainer and over a large bowl to collect the huices. With your fingers gently open the tomatoes, letting the jucies and seeds drop into the strainer. Place the seeded tomatoes on the foil lined sheet. Sprinkle with the brown sugar and roast until liquid has evaporated, about 20 minutes. Discard the seeds in the strainer and reserve the juice in the bowl. You should have abour 2 1/2 cups juice. Melt butter in a large saucepan over medium heat. Add the leeks and 1/4 tsp. salt and cook stirring until the leeks have softened, about 5 minutes. Add the tomato paste and nutmeg and cook stirring, about 1 minute. Add the flour and stir, cook for 1 minute. Whisking constantly add the veggie broth until the mixture is smooth, without any flour lumps Add the reserved tomato juice and roasted tomatoes. Bring to a boil, reduce heat, cover and simmer on low to blend the flavors, about 10 mins. Puree the soup in batches in a blender until perfectly smooth. Return soup to a clean saucepan and adjust the seasonings, adding salt and cayenne pepper to taste. Warm and serve or refrigerate in an airtight container and heat when ready to use.
