Guest guest Posted December 12, 2005 Report Share Posted December 12, 2005 Chocolate Peppermint Cupcakes 1 1/2 c. flour 1 c. sugar 1/3 c. cocoa 1 tsp baking soda 1/2 tsp salt 1 c. cooled strong peppermint tea 1/2 c. canola oil 2 tbsp apple cider vinegar Creamy Chocolate frosting small candy canes or crushed peppermint candies paper liners 1. preheat oven to 350 degrees and line a 12-muffin tin with liners. 2. sift together flour, sugar, cocoa, baking soda, and salt in lg mixing bowl. 3. in medium bowl, whisk together tea, oil, and vinegar. add wet to dry and mix till smooth. 4. distribute batter evenly into liners. bake 20-25 minutes, till tops are springy to touch. remove from tin and cool completely on wire rack before frosting. 5. to decorate: frost each generously and top with crushed peppermints. Creamy Chocolate Frosting 4 oz semisweet chocolate 6 oz firm silken tofu 1 c. powdered sugar, sifted 1 tsp vanilla or 1/8 tsp peppermint extract 1. in top of double boiler melt chocolate. 2. in food processor, combine tofu, powdered sugar, and vanilla. add melted chocolate and blend till smooth.
