Nice fat free recipe and a good way to eat a veggie few people incorporate

into their diet.

 

Swedish Rutabagas with Apple and Cardamom

 

1 pound of rutabagas, peeled

1 cup applesauce

1/2 tsp. ground cardamom

1/2 tsp. cinnamon

1/4 tsp. salt

1/4 tsp. white pepper

 

Cut rutabagas into 1-inch chunks (be careful they are very hard), and place in

a saucepan with

water to cover. Bring to a boil and simmer for about 25 minutes until tender.

Drain and mash the rutabagas chunks, or puree them in a food processor or

blender.

Blend well with the applesauce and seasonings.

Serve hot. This dish can be made ahead, refrigerated and reheated.

Serves about 5
