Jane Spinach Balls 2 boxes chopped frozen spinach - thawed and squeezed 1 lg onion, chopped fine 4 eggs, beaten 3/4c. butter or margerine 1/2 tsp garlic, minced 1/2 tsp thyme 1/2 c. parmesan cheese 2 1/2 c, PepperageFarns Herb Stuffing Mix (not cubed type) Mix, chill (1 hr) and roll into bite size balls. When it is, I buy organic non vegan things and use them. Thanks so much; these will be lots cheaper than the little package of about nine spinach 'mini cakes' you buy at Walmart for three dollars!
