Lefse

--- lefse looks like a tortilla but made from potatoes. our family

likes it spread with real butter, sprinkled with sugar, and rolled

up. my grandfather will drive hundreds of miles to get the good

stuff but has since found out I have " the " family recipe. my great-

grandma used to make it all the time but passed way 15+ years ago.

when her family was cleaning out her house they tossed her cookbooks

and her old Bible in trash can. being me--I scooped it all up

because they were written in her handwriting and were much more

valuable than the " stuff " people were fighting over : ). when I got

married I found the recipe again and gave it a try and I am the

official lefse-maker for the family. HOWEVER, one tradition that

will die in my family is lutefisk and pickled herring--not happening

in this house : ). will be making a huge batch this year again. I

would give anything for a lefse pan but settle with an electric

skillet which works just as well. lefse rolling pin helps and it's

nothing more than a grooved rolling pin.

 

Lefse:

 

~5 lbs potatoes (have used russet and Yukon gold), peeled

1/2 lb butter, softened

sm amount of milk

1/2 c. sugar

flour--start with 5 c.

 

cook potatoes till tender, drain, and rice them (gives best

texture). add butter, milk, and sugar. add flour and work in enough

extra flour to make soft dough. flour work surface and turn dough

out. break off a piece the size you would use to make rolls. roll

out thin and cook on hot electric skillet till lightly browned on

both sides. remove and butter them with little sugar and roll up.
